    At Yūgen Matcha, we approach our tea with care and precision to ensure every detail of its character is understood and shared authentically, by focusing on five essential qualities: sweetness, umami, thickness, acidity, and vegetal notes.

    We capture the true balance and harmony of the Yabukita cultivar. Each aspect is evaluated with intention: the gentle natural sweetness, the deep umami richness, the smooth and rounded body, the clean, low acidity, and the light vegetal freshness that adds subtle depth without overpowering. Guided by this philosophy, we follow a clear three-step process to deliver the most accurate and comprehensive assessment of Yūgen's matcha.

    Step 1: Prep for consistency

    Use water at 80°C. Sift 2g into a pre-warmed bowl for Usucha (add 70-80ml water); for Koicha, use 3-4 g with 30-40ml water at 75°C. Pre-soak the Chasen, then whisk (W-motion) until fine microfoam forms with no clumps.

    Step 2: Visual and aroma check

    Evaluate dry powder (vivid, uniform green; fine texture). After whisking, check crema stability and surface uniformity. Inhale aroma immediately: note fresh green, nutty/umami, floral, or sea-breeze nuances.

    First sip: sweetness, umami, acidity (clean vs sharp).
